Olive oil cake

A moist, fragrant cake where olive oil brings depth and tenderness. Surprisingly simple. Watch the video above for Chef John's method.

  • olive oil180 ml
  • milk120 ml
  • orange, zest + juice1
  • all-purpose flour220 g
  • baking powder2 tsp
  • salt½ tsp
Method

    Heat the oven to 175°C (347°F) and grease a tin (about 23 cm).

    Whisk the eggs and sugar pale, add the olive oil, milk, zest and juice.

  3. 3

    Fold in the flour, baking powder and salt to a smooth batter.

    Pour into the tin and bake 40–45 minutes until a skewer comes out clean.
