Fudgy brownies
A dense, fudgy middle and that glossy, crackly top. All in one bowl. Watch the video above for the method.

- dark chocolate200 g
- granulated sugar250 g
- eggs3
- vanilla extract1 tsp
- all-purpose flour90 g
- cocoa powder30 g

Heat the oven to 175°C (347°F) and line a tin (about 20×20 cm) with baking paper.

Melt the butter and chocolate together. Stir in the sugar.

Whisk in the eggs one at a time until glossy, then the vanilla.

Fold in the flour, cocoa and salt. Stir just until combined.

Pour into the tin and bake 25–30 minutes. Cool completely before cutting. See the video for tips.
